Brown Rice Salad
(vegan)
Ingredients:
4oz Brown rice (long grain
- preferably organic)
4oz Green peas (fresh or frozen)
4oz Drained sweetcorn
4oz Red capsicum (finely diced)
4oz Green capsicum (finely diced)
1 Salad tomato (finely diced)
1 Medium red onion (finely chopped)
4fl oz House dressing House
Dressing
Salt & fresh ground black pepper
Instructions:
Boil the 4oz of brown rice in 2 pints
of water for approx 25 minutes until cooked. Drain into a sieve and thoroughly
rinse in cold water. Empty the rice into a medium sized mixing bowl.
Boil 1 pint of water with a pinch of
salt and granulated sugar. Add the 4oz of peas, bring back to the boil
and simmer for 5 minutes. Drain into a sieve and chill in cold water. Add
the peas to the mixing bowl.
Add the 4oz sweetcorn, 4oz each red
& green capsicums, tomato and red onion to the mixing bowl. Mix, add
the 4fl oz house dressing (House
Dressing), season with salt and fresh
ground black pepper.
Tip: The concept is to finish with a
colourful tasty salad. If need be, in future, adjust the chopped
size and quantities of the ingredients to suit.
