House Dressing
(vegan)
Ingredients:
250ml White wine vinegar
250ml (approx) Vegetable oil
2 tbsp Salad herbs*
2 tbsp Castor sugar
2 tbsp Coarse grain mustard
* Salads herbs are available through some
retail outlets and usually contain a mixture of parsley, carrots, onions,
garlic, peppers and chives. We are able to supply 100gm packs of salad
herbs @ £1.25 each.
Dried tarragon makes a good alternative
dressing, particularly for people who are allergic to onion, garlic or
peppers.
Instructions:
Pour the 250ml of white wine vinegar
into a liquidiser. Add the 2 tbsp each of salad herbs, castor sugar and
coarse grain mustard (whole grain mustard works BUT not as well). Liquidise
for 20 seconds and then very slowly dribble in the 250ml of vegetable oil.
(As the oil is dribbled in, the hole down the middle of the liquidiser
will slowly reduces in size until it almost vanishes - stop adding the
oil at this point).
The finished dressing should have quite
a thick consistency and should show no sign of separating.
Separation generally occurs if the
oil is dribbled in too quickly or a slight separation often occurs if whole
grain mustard is used instead of coarse grain mustard. Stored in an airtight
container this should keep for months.
