We are currently converting some of our restaurant recipes to domestic quantities (sacks, cases, tubs etc. have little meaning in the home). As time goes on we will publish recipes which are suitable for domestic production BUT are not available on our menus. We normally work in tubs and are converting these to lbs, kg, fl oz, ml etc. Initially many of our recipes will have mixed units ie. ml & fl oz, lb/oz and gm.
